Campurrianas
Small Catalan almond cookies - a simple recipe from Simon for delicious cookies.
Ingredients
- 200g flour
- 125g butter
- 125g sugar
- 50g almond flour (ground almonds)
- 1 egg
- ½ packet baking powder
Instructions
- Preheat oven to 240°C.
- Melt butter and mix with the egg.
- Add the remaining ingredients and mix everything well.
- Form small balls from the dough.
- Place on a baking sheet lined with parchment paper.
- Bake for 9 minutes at 240°C.
Tips
- The high baking temperature ensures quick, golden browning
- The cookies shouldn’t be made too large
- They taste especially good while still warm
- Can be stored in a cookie tin for several days
