Spaetzle Basic Recipe

Description

Traditional German Spaetzle recipe - fresh egg noodles that are perfect as a side dish or main course.

Ingredients

  • 375 g flour
  • 2 eggs
  • Salt
  • ¼ l water
  • 1 tablespoon oil
  • Onions (optional)
  • Bacon (optional)
  • Gouda cheese, grated

Instructions

  1. Mix flour, eggs and salt, add water - depending on egg size, use slightly less than ¼ l if needed.

  2. The dough should be smooth and not too stiff. Continue working the dough with the kneading hook of a hand mixer until it forms bubbles.

  3. Fill a large pot half full with salted water and heat, add 1 tablespoon oil.

  4. Fill dough into potato-spaetzle press and push through into boiling water.

  5. Spaetzle are done when they float to the surface. Lift out with a ladle and keep warm.

  6. Optional: Fry onions (optionally with meat!) and bacon too. Mix with spaetzle and plenty of grated Gouda. Salt and pepper. Cover so it melts nicely.

Notes

Alternative Thermomix Recipe:

  • 300 g flour
  • 3 eggs
  • 80 g hot water (not cold)
  • ¾ tsp salt
  • pepper

Storage: Freezing possible, but not more than 3 days - loses taste and consistency.
