Spaetzle Basic Recipe

Description
Traditional German Spaetzle recipe - fresh egg noodles that are perfect as a side dish or main course.
Ingredients
- 375 g flour
- 2 eggs
- Salt
- ¼ l water
- 1 tablespoon oil
- Onions (optional)
- Bacon (optional)
- Gouda cheese, grated
Instructions

Mix flour, eggs and salt, add water - depending on egg size, use slightly less than ¼ l if needed.

The dough should be smooth and not too stiff. Continue working the dough with the kneading hook of a hand mixer until it forms bubbles.

Fill a large pot half full with salted water and heat, add 1 tablespoon oil.

Fill dough into potato-spaetzle press and push through into boiling water.

Spaetzle are done when they float to the surface. Lift out with a ladle and keep warm.

Optional: Fry onions (optionally with meat!) and bacon too. Mix with spaetzle and plenty of grated Gouda. Salt and pepper. Cover so it melts nicely.
Notes
Alternative Thermomix Recipe:
- 300 g flour
- 3 eggs
- 80 g hot water (not cold)
- ¾ tsp salt
- pepper
Storage: Freezing possible, but not more than 3 days - loses taste and consistency.
