A traditional Catalan recipe for marinating fresh salmon with salt and sugar - an ancestral method that preserves fish perfectly.
Ingredients
- 1 fresh salmon cut into two parts (fillets), unscaled
- Dill
- 1kg sugar
- 1kg salt
Instructions

Prepare salmon: Remove all remaining bones from the edges with tweezers.

Season: Place dill on top of the salmon.

Prepare mixture: Mix 1kg sugar and 1kg salt.

Cure: Cover the fish with the salt-sugar mixture and cover with plastic wrap.

Refrigerate: Leave about 24 hours in the refrigerator.

Finish: Then pour off the water that will have formed, discard the salt/sugar and rinse the fish under running water to remove the salt.
