A traditional Catalan recipe for marinating fresh salmon with salt and sugar - an ancestral method that preserves fish perfectly.

Ingredients

  • 1 fresh salmon cut into two parts (fillets), unscaled
  • Dill
  • 1kg sugar
  • 1kg salt

Instructions

  1. Prepare salmon: Remove all remaining bones from the edges with tweezers.

  2. Season: Place dill on top of the salmon.

  3. Prepare mixture: Mix 1kg sugar and 1kg salt.

  4. Cure: Cover the fish with the salt-sugar mixture and cover with plastic wrap.

  5. Refrigerate: Leave about 24 hours in the refrigerator.

  6. Finish: Then pour off the water that will have formed, discard the salt/sugar and rinse the fish under running water to remove the salt.
