Ingredients

Shortcrust Pastry (Pâte Brisée)

  • 250g all-purpose flour
  • 125g cold butter
  • 1 egg
  • Water (as needed)
  • Salt
  • Pepper

Filling

  • 3 eggs
  • 200g crème fraîche
  • 200g cheese (Emmental or Gouda recommended)
  • 20g Parmesan (optional)
  • 100g to 200g tofu
  • 2 onions
  • 1 red bell pepper and/or 1 zucchini and/or 1 eggplant and/or 1 leek

Instructions

  1. Prepare the vegetables: Preheat your oven (or air fryer) to 180-200°C. Roast the whole vegetables for about 15 minutes, until they are slightly tender and beginning to brown. Watch that smaller pieces don’t burn. Peel eggplants and peppers after cooking if desired (easier than before cooking), as the skin can be unpleasant once cooked.
  2. Prepare the shortcrust pastry: In a large bowl, mix the flour, salt, and pepper. Add the cold butter in small pieces and the egg, and work with your fingertips. Add water or flour gradually until you achieve a homogeneous dough. Form into a ball and let rest in the refrigerator.
  3. Prepare the filling: In a large bowl, beat the 3 eggs. Add the crème fraîche, grated cheese, and tofu cut into small cubes. Incorporate the pre-cooked and chopped vegetables. Season generously with salt and pepper. Mix all ingredients well.
  4. Assemble the quiche: On a floured work surface, roll out the pastry into a circle about 3-4 mm thick. Line a 24-26 cm diameter quiche dish with the pastry. Prick the bottom with a fork.
  5. Baking: Pour the filling over the pastry. Sprinkle the Parmesan on top and add freshly ground pepper. Bake for at least 35 minutes, or until the quiche is golden brown and the filling is set. Baking time may vary depending on your oven.

Notes

  • Whole wheat flour or other types of flour can be used for the pastry to vary flavors and textures. Seeds (sesame, poppy) can also be added to the dough.
  • The vegetables are fully adaptable according to your tastes and the seasons. Feel free to substitute or add other vegetables like spinach, mushrooms, cauliflower, or broccoli.
  • This quiche is ideal for preparing a meal in advance for travel or picnics. It tastes great both hot and cold.
