Quiche Lorraine
Ingredients
Shortcrust Pastry (Pâte Brisée)
- 250g all-purpose flour (Farine)
- 125g cold butter (Beurre)
- 1 egg (Oeuf)
- Water (Eau)
- Salt (Sel)
- Pepper (Poivre)
Filling (Garniture)
- 3 eggs (Oeufs)
- 200g crème fraîche
- 200g cheese (Emmental / Gouda recommended)
- 20g Parmesan (optional)
- 100g ham cubes (cubes de jambon)
Instructions
- Preheat Oven: Preheat your oven to 180-200°C.
- Prepare the Shortcrust Pastry: In a large bowl, combine the flour, cold butter (cut into small pieces), the egg, a pinch of salt, and a dash of pepper. Mix and gradually add a little cold water, until the dough comes together. Add more water or flour if needed to achieve the right consistency. Let it rest in the refrigerator.
- Prepare the Filling: In a large bowl, thoroughly whisk together the 3 eggs, crème fraîche, shredded cheese, and ham cubes.
- Assemble: On a lightly floured surface, roll out the chilled pastry dough and carefully line a quiche pan. Pour the prepared filling into the pastry shell. Sprinkle the Parmesan and a generous amount of freshly ground black pepper over the top.
- Bake: Bake for at least 35 minutes, or until the quiche is golden brown and the filling is set. Adjust baking time based on your oven and desired color.
Notes
Whole wheat flour or other types of flours can be used for the pastry. Seeds can also be added for extra texture and flavor.
For the filling, cooked vegetables such as onions, bell peppers, eggplant, zucchini, leeks, etc., as well as tofu, complement the quiche very well or can even replace the ham (see Vegetarian Quiche recipe).
Quiche is a go-to meal for preparing in advance for travel or a picnic.
