Description

Ultra crispy chicken KFC-style with a crunchy corn flakes coating and spiced marinade.

Ingredients

For the marinated chicken:

  • 1 large chicken breast
  • 2 cups milk
  • 2 cloves garlic
  • 1 tsp paprika
  • 1 tsp ginger powder
  • Chili flakes (optional)
  • A drizzle of lemon juice
  • Salt
  • Pepper

For the coating:

  • 1 cup flour
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tbsp paprika
  • 2 eggs
  • About 300g unsweetened corn flakes
  • Oil for frying

Instructions

  1. Cut the chicken breast into various-sized pieces.

  2. In a bowl, mix the milk, spices, garlic and lemon, and add the chicken.

  3. Mix everything well, cover with plastic wrap and marinate in the fridge for at least 4 hours (overnight is perfect!).

  4. In a bowl or deep plate, beat the eggs.

  5. In another bowl or deep plate, mix the flour and spices.

  6. In a third bowl or deep plate, roughly crush the corn flakes.

  7. In a large skillet or pot, heat about 3 cm of oil.

  8. Piece by piece, remove the chicken from the marinade and drain slightly.

  9. Roll it in the flour mixture, then the beaten eggs, and then the corn flakes. Plunge into hot oil on medium/low heat, let it cook without burning (about 5 minutes more or less depending on piece size), then place on paper towels.

Notes

Important: Marinate for at least 4 hours, ideally overnight for best flavor. Oil temperature should be medium-low to avoid burning the coating.
