Jam Cookies "Spitzbuben"

Ingredients

  • 600g all-purpose flour
  • 1 packet baking powder (typically 15-16g)
  • 100g granulated sugar
  • 2 packets vanilla sugar (typically 8g each)
  • 2 eggs
  • 300g cold butter
  • Jam (for filling)
  • 1 lemon
  • Powdered sugar (for lemon glaze)

Instructions

  1. In a large bowl, mix the flour and baking powder. Add the granulated sugar, vanilla sugar, and eggs to the flour mixture.
  2. Add the cold butter in pieces to the mixture. Knead everything together from the center of the mass to form a smooth dough.
  3. Wrap the dough and refrigerate for at least 30 minutes.
  4. On a lightly floured surface, roll out the dough to about 3-4mm thickness. Cut out cookies and rings of the same size using cookie cutters.
  5. Place the cookies on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for approximately 8 minutes, or until light golden. Watch carefully as they can brown quickly.
  6. Let the baked cookies cool slightly. Spread jam on the bottom of the solid cookies and top with a ring cookie to create the “double decker” effect.
  7. For the lemon glaze, mix powdered sugar with a few drops of lemon juice until a smooth, thick consistency is achieved. Drizzle or spread the lemon glaze over the ring cookies.

Notes

These cookies are perfect for a snack or with a cup of coffee. You can use any type of jam you prefer for the filling. The dough can be made ahead of time and stored in the refrigerator for up to 2 days. Ensure the butter is cold for the best dough consistency.
