Red Kuri Squash Soup
Description
Traditional French pumpkin soup (Crème de Potimarron) with carrots, onions, and sweet potato.
Ingredients
- 1 red kuri squash (potimarron)
- 2 carrots
- 1 onion
- 1 small sweet potato
- vegetable or chicken broth
- chestnuts (optional)
- heavy cream
- spices (optional)
Instructions

The potimarron should be washed but not peeled. Cut it into cubes.

Peel the carrots, onion and sweet potato.

Sauté the finely chopped onion with oil in the pot. Add the potimarron pieces and stir. Let cook for about 10 minutes, add the carrots and sweet potato and cook 5 more minutes.

Prepare ¾ l of vegetable or chicken broth and cover the vegetables. Let cook for about 20 minutes.

Then blend with an immersion blender.

You get a purée: add more broth to reach soup consistency.

Before serving, a drizzle of cream works very well.
Notes
The potimarron (red kuri squash) doesn’t need to be peeled, just washed and cubed.
