Put 3/4 tsp medium-hot and 1 tsp honey mustard as well as 1 knife tip of grated garlic in a bowl. Mix with a whisk.

Then slowly add 3 tbsp oil and 1 tbsp broth while stirring quickly. Season the dressing with a little vinegar, salt and pepper.

Repeat the process several times until you have enough vinaigrette.

Wash the salad greens, spin dry, tear into pieces and dress with the vinaigrette.
Notes
- Prepare the vinaigrette slowly and with constant stirring for the best emulsion
- Only dress the salad just before serving
