Green Salad with Vinaigrette

A classic French green salad with homemade vinaigrette dressing.

Ingredients

For the Vinaigrette

  • 1 small garlic clove
  • 3/4 tsp medium-hot Dijon mustard
  • 1 tsp Dijon honey mustard
  • 9 tbsp neutral oil (sunflower, rapeseed or corn oil)
  • 3 tbsp broth
  • 1 tsp mild vinegar
  • Salt
  • Pepper

For the Salad

  • Mixed salad greens of choice

Instructions

  1. Put 3/4 tsp medium-hot and 1 tsp honey mustard as well as 1 knife tip of grated garlic in a bowl. Mix with a whisk.

  2. Then slowly add 3 tbsp oil and 1 tbsp broth while stirring quickly. Season the dressing with a little vinegar, salt and pepper.

  3. Repeat the process several times until you have enough vinaigrette.

  4. Wash the salad greens, spin dry, tear into pieces and dress with the vinaigrette.

Notes

  • Prepare the vinaigrette slowly and with constant stirring for the best emulsion
  • Only dress the salad just before serving
